Date Filled Cookies Recipe

1/2 cup
2 teaspoons
3 1/2 cups
1/2 teaspoon
1 teaspoon
1/8 teaspoon
2 cups
3/4 cup
3/4 cup
1 cup
1 teaspoon
butter
brown sugar
eggs
water
vanilla
flour
salt
baking soda
cinnamon
dates, pitted and chopped
sugar
water
walnuts, chopped fine
vanilla

Oven Temp: 350°
Recipe Cooking Time: 10 to 12 minutes
Pan Type: cookie sheet


Date Filled Cookies Directions

Preheat your oven.

In a large mixing bowl cream the butter and brown sugar together until fluffy.
Add the eggs, water and vanilla and beat well.
Add the flour, salt, baking soda, cinnamon.
Mix until all the dry ingredients are moistened.

Filling
In a small saucepan combine the dates, sugar, water, nuts and vanilla.
Bring mixture to a boil over medium heat while stirring constantly.
Cook until mixture is thickened.

Drop about 3/4 teaspoon cookie dough and top dough with about 1/2 teaspoon of filling and place another 3/4 teaspoon of dough on top of the filling.
Bake date filled cookies for the allotted time.
Cool date cookies and serve along with your favorite drink.

Recipe Makes: about 36 cookies

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
