Cookie Pizza Recipe

4 cups
1/3 cup
1/3 cup
1/3 cup
1/4 cup
1 teaspoon
2 cups
1/4 cup
2 tablespoons
1/2 cup
rice chex cereal
white sugar
packed brown sugar
peanut butter (crunchy)
butter or margarine (softened)
beaten egg
miniature marshmallows
miniature semisweet chocolate chips
chopped honey-roasted peanuts
candied cherries, sliced

Oven Temp: 375º
Recipe Cooking Time:12 minutes + 5 minutes
Pan Type: 12 inch Pizza Pan

Preheat oven.

Place cereal in a zip-lock storage bag, seal bag and crush with rolling pin.

In large bowl, mix white sugar, brown sugar, peanut butter, butter, vanilla and egg. Stir in crushed cereal.
Spread onto un greased pan.

Bake 12 minutes, and remove from oven. Sprinkle evenly with marshmallows leaving a 1 inch edge all the way around.
Return to oven and bake 5 minutes longer or until marshmallows are a light golden brown.
While still hot sprinkle chocolate chips, peanuts and candied cherry pieces over the marshmallows to look like pizza toppings.

Cool completely on rack.
Cut into 16 wedges.
Cover with plastic wrap and store.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
