Coconutty Bar Recipe

1/2 teaspoon
1 cup
1 cup
brown sugar, packed firm
brown sugar
baking powder
shredded coconut
pecans, chopped

Oven Temp: 350°
Recipe Cooking Time: 35 minutes
Pan Type: baking pan

Coconutty Bar Directions

Preheat your oven.

In a large mixing bowl cream together the butter and first amount of brown sugar.
Add the flour and mix with a fork until crumbly.
Pat crumb mixture into pan.
Bake in hot oven for 10 minutes.
Remove from the oven and cool on wire rack.
In a large mixing bowl beat the eggs until fluffy.
Add second amount of brown sugar and vanilla and mix well. Add second amount of flour, baking powder, salt, coconut and chopped pecans.
Mix well and spread on top of first layer.
Return mixture to oven and bake for remaining 25 minutes. Remove coconutty bar from oven and cool on wire rack.
Cool bars before cutting.
Serve coconutty bar along with your favorite drink.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
