Cracker Jacks Recipe

(This is basically a caramel popcorn recipe)

1 gal.

1 cup
2 cup
1/2 cup
1 tsp
1/2 tsp
1 tsp
popped corn or 6qt. popped corn and 2qt. mixed cereal like Chex or Cheerios
brown sugar
corn syrup
baking soda

Oven Temp: 200°
Recipe Cooking Time: 1 hour
Pan Type: large saucepan

Cracker Jacks Directions

Melt butter in a large saucepan.
Stir in brown sugar, syrup and salt. Bring to a boil, stirring constantly.
Boil without stirring for 5 minutes. Remove from heat.

Stir in vanilla and soda. Pour over popcorn. Mix well.

Turn onto 2 large cookie sheets.
Place on the top rack of the oven at 200° for 1 hour, stirring every 15 minutes.

Some may say this is one cracker jack of a recipe.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
