Raspberry Custard Kuchen Recipe

Raspberry Custard Kuchen or Raspberry Cream Cake

Having German parents and grandparents, our family has been baking this German
treat for generations. We love it for breakfast or as a special dessert. It's easy mixing and impressive to serve.

1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup cold butter
2 tablespoons milk

1/2 cup flour
1/2 cup sugar


3 cups fresh raspberries
1 cup sugar
1 tablespoon all-purpose flour
2 eggs,
4 oz. Neufchatel or cream cheese
1/2 cup milk
1 teaspoon vanilla extract

Oven Temp: 375°
Recipe Cooking Time: 55 to
Pan type: 8x12 or 10x10 inch baking dish

Raspberry Custard Kuchen Directions

Spray baking pan with non stick cooking spray.

In a bowl, combine 1 cup flour and salt; cut in butter until the
mixture resembles coarse crumbs. Stir in the milk; pat into a prepared
baking dish.
Using the same bowl, combine the sugar and half cup or flour;
sprinkle over crust.
Spread the raspberries evenly over the crumbs. In a blender, combine sugar
and flour, add in the eggs, milk, cream cheese and vanilla; blend until smooth and pour over the berries.

Bake in a preheated oven until lightly browned on top and the center no longer looks runny.
Serve warm or chilled.
Store in refrigerator.

Yield: 9-12 servings.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
