Chicken Tamale Casserole Recipe

1 can
1 – 16 ounce can
1/2 teaspoon
1/4 teaspoon

1 – 7 ounce can

chicken breast, cooked, diced
corn tortillas
cream of mushroom soup
cream of chicken soup
chicken broth
ground black pepper
onion, chopped
green salsa
chili, no beans
Mexican blend cheese

sour cream, optional
salsa, optional

Oven Temp: 350°
Recipe Cooking Time: 45 minutes
Pan Type: 9 x 13" baking pan

Chicken Tamale Casserole Directions

Preheat your oven.

Layer cooked diced chicken in bottom of pan.

Tear tortillas into bite size pieces and layer on top of chicken.

In a large bowl combine the cream of chicken soup, cream of mushroom soup, chicken broth, salt and pepper. Stir with wire whisk until smooth. Add the chopped onion, salsa and chili. Mix well and pour over chicken and corn tortillas.

Cover and bake chicken tamale casserole in a hot oven for 20 minutes.

Remove cover, top with cheese and bake tamale casserole for additional 25 minutes uncovered. Serve casserole with sour cream and salsa if desired.

Recipe Serves: 12 to 15
