Chicken Strata Recipe

onion, chopped
celery, chopped
green bell pepper, chopped
bread, buttered
chicken, cooked, diced
cream of mushroom soup
pimentos, diced
ground black pepper
sharp cheddar cheese, shredded

nonstick pan spray

Oven Temp: 350°
Recipe Cooking Time: 75 minutes
Pan Type: 9 x 13" baking pan

Chicken Strata Directions

Preheat your oven.

In a large skillet melt the butter. Add the chopped onions, celery and green pepper. Cook until vegetables are tender.

Set aside to cool. Spray pan with nonstick spray.

Put buttered sides of bread together and cut into 1” cubes. Place cut bread into bottom of pan.

Mix the chicken, mayonnaise and the sautés vegetables. Spread chicken mixture over top of bread.

Beat the eggs, stir in mushroom soup, milk, pimentos, salt and pepper. Pour over the chicken and bread. Bake chicken strata in a hot oven for 1 hour.

Remove strata recipe from oven and top with the cheese.

Return to oven and bake chicken strata for an additional 15 minutes. Let set 10 minutes before serving.

Note: If using glass pan reduce heat to 325°.

Recipe Serves: 8 to 10

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
