Chicken Strata Recipe

onion, chopped
celery, chopped
green bell pepper, chopped
butter
bread, buttered
chicken, cooked, diced
mayonnaise
eggs
cream of mushroom soup
milk
pimentos, diced
salt
ground black pepper
sharp cheddar cheese, shredded
Nonstick pan spray

Oven Temp: 350°
Cooking Time: 75 minutes
Pan Type: 9 x 13" baking pan

Preheat Oven.

In a large skillet melt the butter. Add the chopped onions, celery and green pepper. Cook until vegetables are tender.

Set aside to cool. Spray pan with nonstick spray.

Put buttered sides of bread together and cut into 1” cubes. Place cut bread into bottom of pan.

Mix the chicken, mayonnaise and the sautés vegetables. Spread chicken mixture over top of bread.

Beat the eggs, stir in mushroom soup, milk, pimentos, salt and pepper. Pour over the chicken and bread. Bake in hot oven for 1 hour.

Remove from oven and top with the cheese.

Return to oven and bake for additional 15 minutes. Let set 10 minutes before serving.

Note: If using glass pan reduce heat to 325°.
