Chicken Tortilla Casserole Recipe

1 large
1 – 6 ounce can

1 – 16 ounce can
1 – 16 ounce can
corn tortillas
cream of chicken soup
jar salsa
onion, chopped
sliced black olives
Mexican blend cheese
black beans, drained
whole kernel corn, drained

dried chives, optional

Oven Temp: 350°
Recipe Cooking Time: 40 to 45 minutes
Pan Type: 9 x 13" baking pan

Chicken Tortilla Casserole Directions

Preheat your oven.

Place whole chicken in large stock pot. Cover with water and bring to a boil. Cook the chicken until it is tender about 45 – 60 minutes. Remove from water and cool slightly for easier handling. Remove skin and de-bone the chicken.

Place the chicken in a large bowl and set aside.

Tear corn tortillas into 1” strips. Combine in a bowl the milk, cream of chicken soup and salsa, chopped onions and olives. Mix well. Layer 1/2 of the torn corn tortillas in pan. Top with 1/2 of soup mixture, 1/2 of the drained black beans and 1/2 of the drained corn. Top with 1 cup of the cheese. Repeat layers.

Bake in hot oven. Serve with additional salsa and sour cream if desired. Sprinkle with dried chives if desired.

Recipe Serves: 9 to 12

Note: I did not have any black beans on hand, so I used Santa Fe beans this time.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
