Curried Bombay Chicken Recipe

3 tablespoons
1  3 to 4 pound
1/2 teaspoon
1/4 teaspoon
1/2 cup
1/2 cup
4 cups
1 1/2 teaspoons
1/2 cup
1/4 cup
olive oil
whole chicken
salt
pepper
onion, chopped
raisins
cooked rice
curry powder
flaked coconut
sliced almonds

Oven Temp: 350°
Recipe Cooking Time: 60 minutes
Pan Type: 2 1/2 quart casserole dish


Curried Bombay Chicken

Preheat your oven.

Cut chicken into serving size pieces and season with the salt and pepper.

In a large skillet brown the chicken well and transfer to plate.

Remove all but 1 tablespoon of pan drippings. Add the onion to skillet and sauté until tender.

Transfer cooked onions to a large bowl. Add the raisins, rice curry powder, coconut and almonds. Mix well to blend.

Place rice mixture in casserole dish. Arrange the chicken on top of rice mixture.

Cover casserole and bake in hot oven for the allotted time.

Recipe Serves: about 6
