Plenty Casserole Recipe

1 large
2 cloves
1 teaspoon
1/2 teaspoon
1 – 16 ounce can
1 – 16 ounce can
1 – 6 ounce can
1 – 12 ounce package
1 1/2 cups
lean ground beef
onion, chopped
green bell pepper, chopped
garlic, minced
ground black pepper
ready cut tomatoes
whole kernel corn, drained
black olives, sliced
noodles, cooked
sharp cheddar cheese, shredded

nonstick baking spray

Oven Temp: 350°
Recipe Cooking Time: 60 minutes
Pan Type: 9 x 13" baking pan

Casserole Directions

Preheat your oven.

Spray pan and set aside.

In a large skillet cook the ground beef, chopped onions, chopped green bell pepper, garlic, salt and pepper until meat is no longer pink in the middle.

Drain off excess fat. Add the tomatoes, drained corn and olives. Stir in the cooked noodles. Pour into prepared pan.

Bake in hot oven for 45 minutes.

Top with the shredded cheese and bake additional 15 minutes.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
