lean ground beef
saltine cracker crumbs
onion, chopped
green bell pepper, chopped
Worcestershire sauce
ground black pepper
garlic powder
potatoes quartered
carrots, quartered and halved
American cheese

Oven Temp: 350°
Recipe Cooking Time: 60 to 75 minutes
Pan Type: 9 x 13" baking pan

Preheat your oven.

In a large mixing bowl combine, the ground beef, eggs, cracker crumbs, chopped onion, chopped green pepper, first amount of ketchup, Worcestershire sauce, salt, ground black pepper and garlic powder. Mix together well. Shape meat mixture into loaf and place in middle of the pan.

Pour second amount of ketchup over the top of meat loaf. Place quartered potatoes around one side of meat loaf. Place cut carrots around other side of meat loaf.

In a small bowl mix the remaining ketchup with the water. Mix well. Pour ketchup mixture over the top of potatoes and carrots.

Cover pan with foil. Bake covered for 60 minutes.

Remove foil and continue to bake for the remaining 15 minutes or until meat thermometer reaches 170°F when inserted in middle of meat loaf and vegetables are tender.

Remove from oven. Lay American cheese on top of hot meat loaf. Let meat loaf set 10 minutes before removing from pan.

Transfer meat loaf to serving platter and arrange cooked vegetables around meat loaf to serve.
