Mexi-Beef Casserole Recipe

1 pound
1 1/2 cups
1 cup
3/4 cup
1 tablespoon
1/8 teaspoon
1/2 teaspoon
2 cups
8 ounces
1/2 cup		 lean ground beef
chunky salsa, mild
frozen corn, thawed
mayonnaise
mild chili powder
ground black pepper
salt
tortilla chips, crushed
Mexican blend cheese, shredded
black olives, sliced
sour cream

Oven Temp: 350°
Recipe Cooking Time: 30 minutes
Pan Type: 2 quart casserole dish


Preheat your oven.

In a large skillet brown the meat until no longer pink in the middle. Drain well.

Add the salsa and corn to cooked meat and cook for 3 minutes. Add mayonnaise, chili powder, pepper and salt. Mix well and heat thoroughly.

Spoon half of meat mixture into bottom of casserole.

Top with half of the crushed chips, cheese and olives. Repeat layers.

Bake in preheated oven for the allotted time. Let set 10 minutes before serving. Serve with dollop of sour cream.
