Orange Zucchini Fritters

Orange zucchini fritters recipe. I wanted to sneak in more vegetables for her fussy eaters, she used this idea. The little ones loved them and ate without a fuss. Though they were no longer warm by the time we finished snapping photos, the fritters, filled with sweet bites of orange, with a swirl of cinnamon, cloves and nutmeg, were fabulous

2 cups grated zucchini
2 cups all purpose flour
1/3 cup sugar
1/4 teaspoon salt
2 teaspoons cinnamon
½ teaspoon cloves
¼ teaspoon nutmeg
1 teaspoon baking powder
¾ cup orange juice
½ cup Greek yogurt
2 eggs
1 medium orange, chopped

Oven Temp: 350°
Recipe Cooking Time: 30 – 35 minutes
Pan Type: bundt bread pan


Pull Apart Bread Directions

1. Grate the Zucchini. Use the large hole of the grater.
2. Place it in a colander and sprinkle with 1 tsp Salt. Toss to combine and set aside for at least 30 minutes.
3. Squeeze the water from of zucchini. You can use your hands or use a cheesecloth.

Combine flour, baking powder, sugar, salt and spices in a large bowl. Set aside..
Combine orange juice and Greek yogurt and stir to combine. Add eggs, stir again until well combined. Place 1 cups diced oranges in a cup.
Add orange juice mixture to dry ingredient and stir just until dry ingredients are incorporated. Add orange mixture and zucchini, stir until combined.
At this point you can fry them pancake style or deep fry them fritter style, serve warm with syrup or drizzle with icing.
