Apple Fritters Recipe

Apple Fritters without icing.

These delicious apple fritters were made weekly by the school cafeteria cook who, "after hours" let me sample them, they are so good and easy to make. I never want to lose this recipe! Try them, they're nice with a pork dinner or serve them up for dessert, you decide.

1 cup milk
1 large egg
1/4 cup butter, melted
1/2 cup granulated sugar
1/4 cup orange juice
1 teaspoon vanilla
1 tablespoon orange rind
1 cup apple, chopped fine
3 cups all purpose flour
1 teaspoon salt
2 teaspoons baking powder
oil for frying

Apple Fritter Directions

In a large mixing bowl combine the milk, egg, melted butter, sugar, orange juice and vanilla. Mix well. Fold in the chopped apples and orange rind. Add the flour, salt and baking powder. Mix until well blended.

Heat a 1/4 of an inch of oil in skillet to about 350°. Drop in the apple fritters dough by tablespoons into hot oil. Fry apple fritters until golden brown, turn and cook the other side.

Remove fritters from skillet and place onto a plate covered with paper towels to drain. Cool apple fritters slightly. Place powdered sugar in a shallow dish and dredge each apple fritter, coating each side well.

Recipe Yields: 2 dozen fritters
