Old Time Potato Bread Recipe

1 medium
1 1/2 cups
2 tablespoons
1/4 cup
1 tablespoons
1/2 teaspoon
1 tablespoon
5 – 6 cups
potato, cut into 6’s
water
shortening
sugar
salt
ginger
dry yeast
bread flour

Oven Temp: 375°
Recipe Cooking Time: 30 – 40 minutes
Pan Type: 9" loaf pan


Bread Directions

Preheat Oven.

In a large saucepan cook the potatoes in water. Blend the potato and water together in a blender. Pour blended potato back into the pan and add enough water to measure 3 1/2 cups. Let water register 120° F on candy thermometer before adding the yeast. Then add the shortening, sugar, salt and ginger. Mix well with an electric mixer. Add 2 cups of flour and mix well. Add the flour 1/2 a cup at a time to make stiff smooth bread dough. Oil a large bowl and put the old time potato bread dough in. Turn bread dough once to oil other side. Cover old time bread and let rise in a warm place until dough doubles in bulk. Punch dough down. Shape bread into two loaves and place into loaf pans. Cover bread and let rise until it doubles in bulk. Bake old time potato bread in a hot oven for the allotted time or until bread sounds hollow when tapped. Remove bread from pans and place onto wire racks to cool.

Recipe Yields: 2 loaves

Note: If you have never made homemade bread please give it a try. This potato bread recipe is one of my families favorites. It is easier than you think, especially if you have a KitchenAid mixer.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier.
