Famous Rolls DirectionsPreheat your oven. In a large mixing bowl combine 2 1/4 cups of flour and the yeast.In a small sauce pan heat the milk, 1/2 cup butter, 1/2 cup sugar and the salt until mixture reaches 120º on a candy thermometer. Stir to melt the butter which does not need to melt completely. Add to the flour mixture. Add the eggs and beat with an electric mixer for 2 minutes. Add the remaining flour 1/2 cup at a time and stir with a wooden spoon. Turn dough out to a lightly floured surface. Knead on the floured surface 4 – 8 minutes or until smooth and elastic. Place dough in a greased bowl turning once to grease the top. Cover famous cinnamon rolls dough with a towel and let rise until it doubles in size, takes about 1 1/4 – 2 hours. Punch dough down and cover and let rise for 10 more minutes. Roll dough into a 12" square. Mix the 1 cup brown sugar, 1/2 cup butter and cinnamon together until crumbly. Sprinkle over the cinnamon rolls dough adding nuts to the mixture. Roll up jelly style and pinch edges to seal. Cut rolled dough into twelve 1" slices and arrange in pan. Cover your famous rolls and let rise for 45 minutes to 1 hour or until doubled in size. Bake famous cinnamon rolls until golden brown. Recipe Note: Make powdered sugar glaze or cream cheese
frosting to spread over the top and serve warm. If you have a Kitchen Aid mixer, there
is no need to mix by hand. Just add your flour, 1/2 cup at a time and mix on the low
setting so flour stays in the bowl. Add flour to make a moderately soft dough, but do not
use more than 5 1/2 cups for this total famous rolls recipe. If any famous rolls are left over,
they will reheat up very nicely in your microwave. |
