Becca's Barbecue Bread Recipe

Becca's Barbecue Bread Hot off The Grill

2 packages active dry yeast
3/4 cup hot water - 105 to 115
2 2/3 cups warm water
1/4 cup sugar
1 tablespoon salt
3 tablespoons shortening
9 ~ 10 cup all ~ purpose flour
soft butter or margarine


Oven Temp: 425° on grill or oven
Recipe Cooking Time: 30 – 35 minutes
Pan Type: 2 – 9 x 5" loaf pans

Becca's Barbecue Bread Directions

Preheat Oven. Line the pans with foil and spray foil with cooking spray . The foil makes for easy cleanup!

1. In a very large bowl, dissolve yeast in 3/4 cup warm water. When yeast has desolved, stir in the 2 2/3 cups warm water, the sugar, salt, shortening and 5 cups of the flour.

Beat by hand until smooth.

Mix in enough remaining flour to make dough easy to handle.

2. Turn dough onto lightly floured board; knead until smooth and elastic, about 10 minutes. Grease your bowl with cooking spray, place dough in the bowl and turn it over so that the greased side is up. Cover with a clean dish towel; let rise in warm place until doubled, about 1 hour. Dough is ready when touched by your finger and the impression remains.

3. Punch down dough, divide in half. Roll each half into a loaf shape, with smooth side up fold ends under. Place seam side down in a prepared loaf pan,- 9 x 5 x 3 inches. Brush loaves lightly with butter. Let rise until double, about 1 hour.

4. Pre heat covered gas grill to medium heat. Place bread loaves on the top rack, away from the flame. Pans should not touch each other or sides of the grill.

Bake 30 to 35 minutes or until golden brown and loaves sound hollow when lightly tapping on the top of loaf. Remove bread from pans. Brush loaves with soft butter; cool and serve.

Makes two loaves. When cooking on the barbeque the loaves do not brown as well as in the oven, but taste every bit as delicious.
