Cinnamon Zucchini Bread Recipe

Sprinkle with cinnamon and sugar before baking. The aroma of bread just before coming out of the oven, fills the kitchen with a delightful scent of cinnamon.

When choosing a zucchini for baking, always look for the most tender outer skin, about 4 to six inches long. The younger they are, means the more flavor it adds when baking.

Zucchini Bread sprinkled with Cinnamon and Sugar

3 large eggs
3 teaspoons vanilla
2 cups grated zucchini, unpeeled
1/4 teaspoon baking powder
1 teaspoon baking soda
2 cups sugar
1 cup vegetable oil
3 cups flour
3 teaspoons cinnamon
1 cup walnuts, chopped (optional)
1 teaspoon salt

Oven Temp: 325°
Recipe Cooking Time:
Pan Type: 2 loaf pans 9 x 5-inches


Cinnamon Zucchini Bread Directions

Preheat the oven.

Whipped Eggs for Zucchini Bread
Put the eggs in a mixing bowl, beat until fluffy.

Add the sugar and oil, then mix well. Add the flour, salt, baking powder, baking soda and cinnamon, stir to blend.

Shredded Zucchini for Baking Bread

Add the zucchini, vanilla and nuts, mix well. Pour zucchini bread dough into greased loaf pans. Sprinkle with cinnamon and sugar.

Baking Zucchini Bread

Bake and then let zucchini bread cool before slicing.
