Pumpkin Bread Recipe

Pumpkin Bread made 10-31-13

This is a great pumpkin bread recipe, Super-moist and packed with flavor. The bread actually tastes even better the day after it is baked. It can be made into a simple pumpkin loaf; or sweetened up with chocolate chips and/or raisins, nuts or cinnamon chips.

2 cups all-purpose flour
1 cup brown sugar, packed
1 tablespoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup canned pumpkin
1/2 cup milk
2 large egg whites, beaten
1/2 cup raisins
1/3 cup sour cream

Oven Temp: 350º
Recipe Cooking Time:
Pan Type: 9 x 5 x 3" loaf pan


Pumpkin Bread Directions

Preheat Oven.

Spray loaf pan with cooking spray.
In a mixing bowl, combine the flour, brown sugar, baking powder, cinnamon, nutmeg, baking soda, ginger and cloves. In another mixing bowl, combine the pumpkin, milk, egg whites, raisins and sour cream. Stir until thoroughly mixed.
Combine dry ingredients with the wet ingredients, stir just until moistened. Pour pumpkin bread batter into your prepared pan. Bake for one hour. Remove from oven and rest in pan for about 10 minutes.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
