Zucchini Pineapple Bread Recipe Two

unpeeled zucchini, shredded
crushed pineapple, drained
baking soda
baking powder
flaked coconut
walnuts, chopped
nonstick pan spray

Oven Temp: 350°
Recipe Cooking Time: 60 minutes
Pan Type: 2 – 9 x 5" bread loaf pans

Zucchini Pineapple Bread Directions

Preheat Oven.

In a large mixer bowl cream together the oil, sugar and eggs. Add the vanilla, unpeeled shredded zucchini and pineapple, mix well. Add the flour, baking soda, baking powder, salt, cinnamon and nutmeg, then mix well. Stir in the coconut and nuts. Pour zucchini pineapple bread batter into sprayed bread loaf pans. Bake zucchini bread for the allotted time or until toothpick inserted in the middle comes out clean. Transfer zucchini pineapple bread to wire racks to cool.

Recipe Yields: 2 loaves

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat.
