Kathy Zucchini Bread Recipe

3 large
1 3/4 cups
1 cup
1 tablespoon
2 cups
2 tablespoons
3 cups
1 teaspoon
1 teaspoon
1/4 teaspoon
2 teaspoons
1/2 cups
eggs
sugar
vegetable oil
vanilla
zucchini, grated, unpeeled
orange zest
all purpose flour
salt
baking soda
baking powder
cinnamon
nuts or raisins, optional
nonstick pan spray

Oven Temp: 325°
Recipe Cooking Time: 55 – 60 minutes
Pan Type: 2 – 8 x 4" bread loaf pans


Zucchini Bread Directions

Preheat Oven.

In a large mixing bowl beat the eggs until light and fluffy. Add the sugar and beat until blended. Stir in the oil, vanilla, grated zucchini and orange rind. Add the flour, salt, baking soda, baking powder, cinnamon and nuts or raisins if desired. Spray bread loaf pans with non stick spray. Divide zucchini bread batter evenly between loaf pans. Bake Kathy's zucchini bread recipe in a preheated oven for the allotted time or until toothpick inserted in the middle comes out clean. Transfer zucchini bread to wire rack to cool.

Recipe Yields: 2 bread loaves
