Cranberry Bread Recipe

1 cup fresh
1 cup
granulated sugar
baking powder
baking soda
orange juice
whole berry cranberry sauce
orange rind, grated
cranberries, chopped
walnuts, chopped

Oven Temp: 350°
Recipe Cooking Time: 60 minutes
Pan Type: 2 – 9 x 5" bread loaf pans

Cranberry Bread Recipe Directions

Preheat oven and spray pans with nonstick pan spray.

In a large mixing bowl combine the flour, sugar, baking powder, salt and baking soda. Stir until well blended. Add shortening and mix on low speed of mixer to blend. Add the eggs, orange juice, whole berry cranberry sauce and grated orange rind. Mix on low setting with mixer only until dry ingredients are moistened. Fold in the cranberries and nuts. Pour the cranberry bread batter into prepared pans. Bake your cranberry bread for the allotted time or until a toothpick inserted in the middle comes out clean.

Recipe Serves: 20 to 24

Note: I store my cranberry bread in plastic bag in the refrigerator. It stays nice when kept cold. If you like your bread warm, just heat in microwave for 20 seconds.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
