Cherry Bread Directions

Preheat Oven.

In a large mixing bowl cream the sugar and butter until fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla, almond flavoring and buttermilk. Add the flour, baking soda and salt. Mix until dry ingredients are well blended. Fold in the chopped nuts and cherries. Spray pans with nonstick pan spray. Spread cheery nut bread batter evenly into prepared pans. Bake cherry bread in a hot oven for the allotted time or until toothpick inserted into the middle comes out clean. Transfer cherry nut bread onto a wire rack to cool. In a small bowl, mix the powdered sugar, melted butter and enough of the cherry juice or milk until desired spreading consistency is reached. Drizzle the glaze over your yummy cherry nut bread.

Recipe Yields: 2 small bread loaves

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
