Carrot Bread Recipe

2 cups
2 teaspoons

cinnamon
salt
vegetable oil
sugar
eggs, slightly beaten
vanilla
carrots, shredded
walnuts, chopped
raisins
flaked coconut
nonstick pan spray

Oven Temp: 350°
Recipe Cooking Time: 1 hour
Pan Type: 9 x 5 x 3" bread loaf pan


Carrot Bread Recipe Directions

Preheat the oven.

Sift the flour, baking soda, salt and cinnamon into large mixing bowl. Add the oil, sugar and eggs, then mix well. Add the carrots, chopped nuts, raisins, coconut and vanilla, mix well. Pour carrot bread batter into prepared pans. Bake bread for 1 hour or until a toothpick inserted comes out clean. When done, remove your carrot cake from the oven. Place your yummy carrot bread onto wire racks to cool. Wait till bread has cooled before slicing.
