Buttermilk Biscuits Recipe

2 cups
2 teaspoons
1/2 teaspoons
1/2 teaspoons
1/2 cup
3/4 cup
all purpose flour
double acting baking powder
baking soda
vegetable shortening

Oven Temp: 425º
Recipe Cooking Time: 12 – 15 minutes
Pan Type: biscuits baking pan

Buttermilk Biscuits Directions

Preheat the oven.

In a bowl, sift together the flour, baking powder, soda and salt. Blend in the shortening until mixture resembles meal. Add the buttermilk, sifting until it just forms a dough. Gather buttermilk biscuit dough into a ball. On a lightly floured surface, knead the dough gently 6 times and pat it to 1/2 inch thick. With a 3 inch cutter, cut out as many buttermilk biscuits rounds as possible.

Recipe Yields: about 8 biscuits.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
