Rhubarb Waffle Recipe

Gluten and Dairy Free Rhubarb Waffles

Rhubarb in the recipe takes the place of any oil, and depending on the amount of sweetness of the sauce, can make the waffles taste a bit tart. Using one of the many gluten free baking mixes on the market today, makes this recipe not only simple but gluten and dairy free.

2 cups Rhubarb sauce
1/2 teaspoon Salt
2 teaspoons Baking powder
2 large Eggs
1 2/3 cup Mama's Gluten Free Almond Baking Mix
1/3 cup Almond Milk, unsweetened
1 teaspoons Vanilla

Recipe Prep Time:
Recipe Cooking Time: to 5 minutes
Pan Type: waffle iron

Gluten Free Rhubarb Waffle Directions

Preheat your waffle iron.

Sift the baking mix, salt and baking powder into a large bowl.
Add in the eggs, rhubarb sauce, almond milk and vanilla, then mix well. The batter should be thick, and still have a pouring consistency. If needed add in a little more almond milk until it pours easily.
Spray the hot waffle iron with olive oil and pour batter onto iron. Bake the Rhubarb Waffles about 3 to five minutes or until golden brown.

Recipe Note: Rhubarb waffles have a slightly tart flavor.
Can eat them plain or with your favorite toppings.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
