Oatmeal Pancakes Recipe

3/4 cup
1 1/2 cups

1 1/4 cups
1/4 cup
2 tablespoons
1 tablespoon
1 teaspoon
rolled oats, oatmeal
milk
eggs, beaten
flour
shortening, melted
sugar
baking powder
salt

Temperature: medium
Recipe Cooking Time: 2 – 6 minutes
Pan Type: 12" skillet or griddle


Pancakes Recipe Directions

Preheat pan for pancakes.

Combine oats (oatmeal) and milk and set aside for 5 minutes. Add the eggs and shortening to oat mixture and mix well. Combine the remaining dry ingredients in a separate bowl. Add to oatmeal mixture and stir until well blended. Pour 1/4 cup of oatmeal pancakes batter onto the hot griddle or skillet. Turn the oatmeal pancakes over only once after they are light golden brown on bottom side. Pancakes will be bubbly on the top surface, take about 2 - 3 minutes. Turn and cook second side of pancakes until lightly brown on the bottom, take about 2 – 3 minutes.

Recipe Serves: about 4 big pancakes
