Pound Cake Muffins Recipe

Pound Cake Muffin with Sprinkles

1 cup
1 stick
2 large
1 cup
2 cups
1/4 teaspoon
1/8 teaspoon
1 tablespoon
granulated sugar
butter, softened
vanilla yogurt
baking soda
poppy seeds
non stick pan spray

Oven Temp: 400°
Recipe Cooking Time: 20 – 25 minutes
Pan Type: muffin pan

Pound Cake Muffins Directions

Preheat your oven.

In a large mixer bowl cream the sugar and butter together.
Add the eggs and beat until fluffy.
Add the yogurt and vanilla.
Beat well.
Add the flour, baking soda and poppy seeds.
Spray muffin pans with non stick spray.
Pour the pound cake recipe into the muffin pans.

Bake pound cake muffins for allotted time or until a toothpick inserted comes out clean.
Spread your pound cake muffins with a glaze and add sprinkles for a quick delightful surprise.

Recipe Yields: 8 – 12 muffins

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
