Fresh Blueberry Muffins

3 large
3 teaspoons
2 cups
1/4 teaspoon
1 teaspoon
2 cups
1 cup
3 cups
1 teaspoon
3 teaspoons
1 cup
 eggs
vanilla
grated zucchini, unpeeled
baking powder
baking soda
sugar
vegetable oil
flour
salt
cinnamon
fresh blueberries

Oven Temp: 325°
Recipe Cooking Time: 1 hour
Pan Type: muffins pans


Blueberry Zucchini Muffins Directions

Preheat your oven.

Put the eggs in a mixing bowl, beat until fluffy. Add the sugar and oil, mix well.
Add the flour, salt, baking powder, baking soda and cinnamon, then stir to blend.
Add the zucchini, vanilla and blueberries, mix well and pour into muffin pans.
Bake up blueberry zucchini muffins. Let muffins cool before serving.

Recipe Yields: 24 regular size blueberry muffins
