Fresh Blueberry Muffins Recipe

2 cups
1/2 cup
1 tablespoon
1/2 teaspoon
1/2 teaspoon
3/4 cup
1 large
1/3 cup
1 cup
1/4 cup
1/4 cup
flour
granulated sugar
baking powder
salt
pumpkin pie spice
milk
egg, slightly beaten
Saffola oil
fresh blueberries
granulated sugar
butter, melted

non stick pan spray

Oven Temp: 400°
Recipe Cooking Time: 20 – 25
Pan Type: muffins pan


Blueberry Muffins Directions

Preheat your oven and spray the muffins pan with pan spray.

In a large bowl sift the flour, sugar, salt and baking powder, then stir in pumpkin pie spice.
Add a slightly beaten fresh egg, fresh milk and oil, stir with a fork until all dry recipe ingredients are moistened.
Muffins batter will be lumpy.
Add the fresh blueberries and gently stir.
Fill each muffin pan 2/3 full. Bake fresh blueberry muffins until a toothpick comes out clean.
Remove muffins from oven.
Dip the top of blueberry muffins in melted butter, then sugar.
Serve up your fresh blueberry muffins warm.

Recipe Note: You may substitute frozen blueberries for fresh blueberries.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
