Sourdough Biscuit Starter Recipe

1 medium
1 cup
3 cups
3 cups
potato
granulated sugar
water
all purpose flour

Container: gallon jar or large crock


Sourdough Recipe Directions

Peel the potato and grate. Place grated potato in a gallon jar or large crock.
Add the granulated sugar, water and flour. Mix well.

Cover with a clean towel for 3 full days.

Every time you take out a cup of sourdough biscuit starter to make biscuits, add 1 cup of water, ½ cup of flour and 1 tablespoon of sugar. This way you will always have enough sourdough biscuit starter for your next batch of biscuits.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup.
