2 cups
1 – 8 ounce box
1 – 8 ounce bag
1/2 cup
butter, softened
granulated sugar
baking soda
flaked coconut
pecans, chopped
dates, chopped
orange slice candies

Oven Temp: 300°
Recipe Cooking Time: 90 minutes
Pan Type: 2 – 8 x 4" loaf bread pans

Orange Bread Directions

Preheat your oven.

In a large mixing bowl, cream the softened butter and sugar until fluffy. Add the eggs one at a time beating well after each addition.
In a separate bowl mix together the flour, salt and baking soda.
Add flour mixture to the creamed mixture alternately with the buttermilk.
Add the vanilla, coconut, chopped pecans and the dates, mix well.
Put the remaining flour into a medium size bowl.
Use kitchen shears to cut orange slice candies into small pieces. Put the cut roll candies through the flour to coat before adding to batter.
Pour orange bread batter evenly into the 2 greased loaf pans.
Bake orange slice bread until a toothpick inserted in the middle comes out clean.
Remove orange bread from oven and place onto wire racks to cool.
Wrap the bread in foil. When completely cool, place in plastic bags to store.

Recipe Note: This orange bread can be made in 3 – 6.5” loaf pans or a large Bundt pan and 1 – 8 x 4" loaf pan.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
