This was the best cornbread recipe I have ever tasted. Given to me by my sister-in-law Connie. It used two of the Jiffy cornbread mixes, and makes enough for everyone at the family gathering. Using both sour cream and creamed corn for the baking liquid.
2 – 16 ounce cans corn, whole kernel (Drained)
1 – 16 ounce can creamed corn
2 large eggs
2 cups dairy sour cream
1 cup butter, melted
2 boxes Jiffy corn muffin mix
1 small jar diced pimentos (optional)

Oven Temp: 350°
Recipe Cooking Time:
Pan Type: 9 x 13' baking pan


Cornbread Directions

Preheat your oven.

In a large mixing bowl beat the eggs, next add in the corn muffin mix, whole corn (Drained), creamed corn (Un-Drained), sour cream, melted butter and pimentos.
Mix up the company cornbread recipe.
Pour the cornbread batter into your baking pan. Bake company cornbread until a knife inserted into the center comes out clean.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier.
