Coffee Cake Directions

Preheat your oven, spray pan with nonstick cooking spray.

In a large bowl combine the flour, granulated sugar and salt, stir to blend.
Using a fork or pastry blender, cut in the butter until it resembles coarse crumbs.
Add the warm milk and egg yolks, stir until mixture forms soft dough.
Combine the yeast and warm water, stirring until yeast is dissolved.

Add to the soft dough and mix in well, cover and let sit overnight in a cool place.

The next day, divide the dough in half.
On a floured surface roll each half into a 1/4" triangle.
In a large mixing bowl beat the egg whites until stiff, spread over the dough.
In a small bowl combine the cinnamon, powdered sugar and walnuts, mix well and sprinkle onto coffee cake dough.
Roll dough up to resemble a jelly roll.
Place coffee cake onto a prepared pan and cover, let rise in a warm spot until cake dough is doubled in size.
Bake up this yummy cinnamon coffee cake.

Substitute, substitute, substitute. Recipes were made to be messed with. Use alternative ingredients to make your recipes healthier. Cook with broth (low-sodium vegetable, low-fat chicken or beef) instead of with oils. Use vinaigrettes or citrus-juice-based dressings instead of creamy ones, which are often full of saturated fat. Try olive oil, skim milk, or yogurt instead of butter or cream. Re-work dessert recipes that require heavy cream with evaporated skim milk or yogurt. For cakes and other desserts, substitute fresh-fruit puree as a topping instead of frosting. And one of my favorites: pancakes with applesauce, not maple syrup. These changes will give your favorite recipes great new flavor, and your food will be healthier!
