Orange Coffee Cake Recipe

1 teaspoon
3 teaspoons
1 cup

Coffee Cake Topping:
1/4 cup
1 teaspoon
1/2 cup
shortening (no oils)
butter
granulated sugar
eggs, separated
all purpose flour
salt
baking powder
orange juice


cocoa powder
ground cinnamon
sugar

 

Oven Temp: 375°
Recipe Cooking Time: 60 minutes
Pan Type: angel food cake pan


Orange Coffee Cake Directions

Preheat your oven and grease pan.

In a large mixing bowl cream the shortening, butter and sugar until fluffy.
Separate the eggs, adding only the yolks to the creamed mixture. Mix and beat well.
Put the whites in another mixing bowl. Beat egg whites until stiff and set aside. Add flour, salt and baking powder to the creamed mixture, alternately with the orange juice.
Beat well after each addition.
Gently fold in the egg whites into the orange coffee cake batter.

In a separate bowl combine;
cocoa powder, cinnamon and the 1/2 cup of sugar, mix well and pour 1/2 of the batter into prepared pan.
Top with 1/2 of the topping, add remaining coffee cake batter and sprinkle with remaining topping.
Bake your orange coffee cake until a toothpick inserted in middle of cake comes out clean.
Remove coffee cake from oven and place onto wire racks to cool.
Dust orange cake with powdered sugar or glaze with a powdered sugar glaze.
