Cranberry Nut Coffee Cake Recipe

1 – 8 ounce can
1/2 cup
1 cup
1/4 teaspoon
2 teaspoons
granulated sugar
dairy sour cream
all purpose flour
baking powder
baking soda
orange rind, grated
whole berry cranberry sauce
pecans, chopped
powdered sugar
orange juice

non-stick pan spray

Oven Temp: 350°
Recipe Cooking Time: 45 – 50 minutes
Pan Type: 9 x 13" baking cake pan

Cranberry Nut Cake Directions

Preheat oven, spray pan with non-stick spray.

In a large mixing bowl beat the butter and sugar until fluffy, add in the eggs and beat until smooth.
Stir in the sour cream and vanilla.
Add the flour, salt, baking powder, baking soda and orange rind, then mix well.
Pour half of the coffee cake batter into your cake pan.
Slice the cranberry sauce and layer on top of batter.
Pour remaining batter on top of cranberry sauce.
Sprinkle with pecans.
Bake your cranberry nut coffee cake recipe until a knife inserted into the middle comes out clean.
Cool cranberry coffee cake on a wire rack while preparing glaze.

In a medium bowl mix the powdered sugar, vanilla and orange juice.
Mix until smooth and drizzle over cake while it is still warm.

Note: Cranberries are a favorite source of vitamins and antioxidants.
